I am seriously considering doing a similar project...
I think it looks flippen nice and should be quite quick off the mark.

Actually they aren't that quick because of the terrible handling. A friend had one in East London that I rode on numerous occasions. You never used 1st gear and then the front wheel was in the air with even a small bit of throttle. He had 80kg of lead under the tank to try get it around corners. Was lekker fun on the beach sand at the lagoon but a bitch anywhere else.

I was thinking of nothing less than the twin port 1600
Do you think it would help if you make the fork longer with less of a vertical angle? Sort of an extreme "easy rider" approach?

All that will do is flop the wheel over on it's side to skid along the road. He made up some sort of independent rear break system that helped it to turn before he sold it but I never got to see or ride it like that.

If you want a trike to go around corners , you need an anti roll bar that literally connects the 2 rear wheels together and makes them move as one .
A full chopper fork works very well for cornering , but won’t stop the front wheel lifting if the weight is behind the rear axle .

I suggest a Schedule 40 40mm pipe - 48mm OD and 4mm walls...

A buddy of mine used to own a trike with a flipped Beetle rear end (tranny input facing forward) and a 2.3 V6 Ford motor from a 20M under the seat ahead of the rear wheels - supposedly to assist with keeping weight on the front end. Bahhh Humbug !!!!
I rode/drove it once and the MoFo tried to kill me by performing an impromptu pirouette on one back wheel when taking off in 2nd gear............
