I didn't;'t go away this long weekend. After a good year camping in the container we are very happy to be at home! Trust me, I'm done camping for a very very long time...
it's quite nice here...
anyway, the first test of the smoker - seeing as we we're rebuilding and the pizza over had cracked from the heat, we rebuilt it with a smoking chamber above it.
this is a 6kg lump of Veld Reared Brisket hung for 28 days
That's 2,5 hour in... another 6 to go. then to rest... tomorrow we have Oysters 'n' black beer at Trigger, so it will get another 6 hours on Tuesday...
then yum!
