Jong ek moet bieg ek "wing" dit as 'n reel...

Basies in 'n semi-soet wyn in 'n kastrol gaar gemaak.

Whole goat kid being braaied after 36 hours marinading in a birria marinade.

"Birria is a Mexican dish from the state of Jalisco. It is a traditional ancestral soup or stew made from a combination of chili pepper-based goat meat adobo, garlic, cumin, bay leaves, and thyme, and cooked at a low heat. Birria is slow-stewed in a pot."

This was, as above, then slow cooked, shredded, and the meat placed in a panini bun with cheese and pickled jalapenos, and toasted on a cubano press. The juices were used to make a dipping sauce.

My verdict?

Muy bien, amigos.

After seeing how you socially engage with your livestock, those neck & belly chops look a lot less appealing...
