A high side wall means you can deflate more.
It’s all about pressure. As you deflate the tyre you apply less pressure to the surface which means you bet more flotation, and a bigger footprint.
The downside is that the sidewalk collapses to form part of the footprint .that means it flexes as you drive. Which causes heat build up in the side wall and delamination of the layers, and tyre failure.
I personally never deflate below 75% of side wall height measured from hard level ground to rim

Many guys will advocate narrow tyres for deep sand but they are ineffective when compared with wider tyres. It’s all about flotation & an aggressive tread that provides movement.

It's amazing how many people don't understand the need to deflate the tyres. I've seen Rubicon's with road pressures with both lockers engaged struggle or fail to get through an obstacle, which I then cruise through with properly deflated tyres.
I also find that people are scared to deflate. I'll quite happily deflate my tyres to 0.6 bar and others are scared to go below 1.3 bar (on a Jimny!!!)

But yes I have seen that as well also with Disco's, bet that is because they a scared of side wall damage, normally due to buying the cheapest AT they can find.

Isn’t the OEM spec for a Jimny’s tyre pressure something like 0.8 bar because of its diminutive size?
But seriously, with normal SUV spec Hankook I would go down to 1.7 bar and they would be flexing like crazy, now on the BFG I go down to 1.0 on a rocky trail and the tyres hardly flex.
I can bet you R5 of Manny’s money that the Hankook is a better tyre in soft sand

Hankooks have soft sidewalls - especially compared to BFGs.

Please correct me if I am wrong...
I heard this a few years ago but not sure of the validity.
The skinny tyres cut deeper into the mud getting to the more solid ground underneath faster. So they dont float on the mud like wider tyres would.

There’s a reason why decent offroad tyres are all 2 ply. You don’t think manufacturers can easily make 3 ply?
